I was never in love with avocados. Yet, they are everywhere and after several years of living in California they grew on me a bit. Really, you’re hard pressed to not find avocado on the menu in California and elsewhere.

From vegans to paleos, everyone has embraced the avocado and with good reason. They are known for being a healthy fat, which may seem a deterrent, but the monounsaturated fats help with nutrient absorption, reduce cholesterol and increase skin tone. Plus they have even more benefits to our health: reduce inflammation, improve vascular health and provide a ton of nutrients. All reasons why the avocado consumption in the US has doubled in the last 10 years.

Even though, I will never just sit down and eat an avocado, I do appreciate them. They add a delicious creaminess to smoothies. The subtle flavor also can be overpowered by others, which is why I like this recipe for Chocolate Avocado Pudding.

I once made it for my sister-in-law who is also not a major avocado lover. While she prefers the regular version made with milk, she had to admit that it wasn’t bad.

The beauty of the Chocolate Avocado Pudding is that it is vegan, gluten free, and paleo-friendly.

Chocolate Avocado Pudding

  • ½ cup raw cacao or cocoa powder
  • 1/3 cup maple syrup
  • ½ Tbsp vanilla
  • ½ tsp salt
  • 3 Ripe Avocados
  • 1 cup almond milk (or other non-dairy milk)

Add all ingredients in a blender. (I find that it helps to add the ingredients in order.) Blend until all ingredients are mixed. You may have to use the plunger or scrape the sides every now and then. Serve and Enjoy!
